Maple Dijon Pork

Sick of chicken?  Craving something different, but also want it to be waistline friendly?

Maple Dijon Pork it is!

This is another one of those freezable delicious meals that has become a staple in our household.  Pair it with Birds Eye Mashed Cauliflower and some simple steamed green beans or sauteed Brussels sprouts- oh man!  Amazing. Check it out!

 

Ingredients:

  • 2 lb pork tenderloin
  • 1/4 cup low sodium soy sauce OR Bragg’s Liquid Aminos
  • 1 tbsp. dijon mustard
  • 2-3 tbsp. maple syrup (feel free to use sugar free!)
  • 1 tbsp. extra virgin olive oil
  • 1.5 tsp. garlic powder

Crock Pot Directions:

  1. Combine all ingredients.
  2. Evenly distribute the mixture over the pork tenderloins.
  3. Cook on low for 4 hours.

 

Oven Directions:

  1. Combine all ingredients.
  2. Evenly distribute the mixture over the pork tenderloins in a 9X13 baking dish.
  3. Bake at 400 for 18-20 minutes or until a meat thermometer reads 145 – 160 degrees.
